Now it was raining quite hard so I'm hoping it was just the rain steaming off but I'm not sure.

A heavy enough rain can cool an engine off a little and yeah, the steam was most likely from rainwater turning to instant steam after hitting the front header that's below the radiator. You can get your radiator pressure tested to rule out any possibility of a pinhole leak though.

So it seems the thermostat is pretty much ok.
Anyone had any experience with the engine coolant temp sensor going off? Thinking that might be my next guess

No probs ever on my temp sensor....and she is a little bit old now...

I might no' be a smart man Jenny....but i can pain' ma copper colored bike a dif'ren color.....
